Directions on how to brew Jun tea from the convenience of your own home, you will need:
A half to one-gallon glass jar,
1 Scoby,
4 tea bags of green tea
1/2 cup of honey
Boil 3/4 of a gallon of water in a big pot on your stove, turn off the heat and steep your 8 teabags in it for 5 minutes, add 1/2 cup of honey, stir until dissolved.
At this point, you’ve made a nice batch of delicious hot tea, so treat yourself to a cup of it, you need to test for quality, am I right?
Allow the remainder cool off to room temperature before pouring it into your sanitized glass gallon jar and add the Scoby.
The key ingredient in Jun tea is the Scoby, which is an acronym for ‘Symbiotic Colony of Bacteria and Yeast.’
It feeds off the honey and turns it into Jun tea.
Cover the opening of the glass jar with a porous material, such as a paper towel, coffee filter, or a piece of cloth.
Fasten your cover onto the rim of the jar with a string or rubber band. Leave it for 7 to 10 days.
Start taste testing a small sample once per day after day ten to determine the perfect ratio of sweet and acidic for your palate.
Brewing your own Jun tea enables you to customize your Jun tea to your personal taste preference.
If you choose to do a second fermentation, use pressure rated glass bottles to trap the gas during this step to ensure carbonation.
Leave un-refrigerated for no more than 36-hours and then keep refrigerated.
